It’s Tuesday!

Happy Tuesday! The day so many people dread is over. On to the next one! Hope you’re on track and getting things done. I’m on the ball. At the same time, I’m feeling really random today. I’m just going to go with it. I hope you don’t mind randomness.

  • Articles all over the place about my appointment to this awesome job. Woot, woot! It was in one newspaper on Friday, another yesterday, and it’s posted in the news/press release section of the Ride For Hope Bahamas website. YAY! Like us on Facebook!
  • I found a crazy ridiculous recipe. For spinach lasagna. Ummm… YUMMM. And it’s made – get this – in a SLOW COOKER! What the monkey wrenches helicopter?!?! I don’t have a slow cooker, but if you do, you should definitely make this lasagna, and FedEx a piece to me. Click here for it.
  • This cell phone battery SUCKS. We went and bought a new BlackBerry last week, but I’m pretty sure it’s the one they had on display. Either they’ve already killed it, or some smart employee switched the battery out with their own. Ugh. I have to order a new one. Hellooo, Amazon.
  • Other things I’m getting from Amazon: a few nice items for Babe’s Christmas stocking (which I won’t list here in case she read this post), a multi-tool for our bikes and stuff, running things (skirts, tanks, shorts), compression sleeves (which I obviously need as my calf muscles keep reminding me)… I don’t remember the rest.
  • Saturday was great. Babe and I spent the day together. Breakfast in bed, a little shopping trip, saved a bunch of money (using a discount card, and winning a $25 gift card at a different store from a scratch ‘n’ win card), had lunch and treats, walked halfway home before someone (Babe knows) stopped and took us the rest of the way. Then we did a little lounging, loving, and then getting ready. Getting ready = showering + packing + doing hair + me envisioning all the missing that would happen once the airport drop happened.
  • I need to get started on our living room project. I think I mentioned how happy I was/am that Babe agreed to it. It’s going to be GREAT when I finish it. If only I could get STARTED. Gees, Louise. I gotta find my way to one or two store to get the necessary material.
  • I’m thinking about making the wall art for our bathroom. Our shower curtain has palm trees, and the colours are nice (tan, brown, green), and the bathmat and wastebasket are well-coordinated. We just need wall art. I’m thinking of cross-stitch. I can definitely do that, and do it right. Whenever I have the time, I’ll find a good palm tree pattern, then go to the local fabric/art-ish store to get the embroidery thread, needle, and cloth/material. Oh, and I need to run it by Babe to make sure it’s okay.
  • I need a MUG. That’s also on the Amazon list. My office is rather chilly, and I like tea and hot chocolate. It’ll all work wonderfully together once I have a mug to keep at work. I’d like it to be a NICE mug. A little oversized. And it should be, of course, GREEN. 🙂 Or purple, since that’s the dominant Ride For Hope Bahamas colour. Dark purple, light purple, green (like the one I like!), and yellow.
  • I have a lot of work to do! It’s great. It’s taking me a while because there is SO much to work on. It doesn’t help that I don’t have a landline in the office yet. OR the internet. The installation date is November 3. Ridiculous. I know. This is how it works in third world countries.
  • Babe is away. Since Saturday night. Won’t be back until next week. *sighs* Denmark is SO far away. The time difference sort of sucks, but we’re managing to communicate fairly often. Of course there’s lots of missing and stuff.
  • I’m staying at my great-grandmother’s (Ma) for the week. She lives a lot closer to where I work, and I can get drives to and from. Saving on the bus fare, and getting to sleep over an hour later. It still doesn’t make up for Babe being away.
  • On Saturday, I’ll be hanging out with our good friend. Vanessa is super cool, but oh-so-very busy. We don’t get to hang out often enough. We’re taking this Saturday to do it up. We’re probably gonna do lunch AND dinner. With wine. Yeah, we’re fancy and splurgy. Doesn’t happen often though, so it’s okay. 🙂 I’m hoping we’ll be in the area of a cool plant shop so I can get a plant for my office. How I’m going to get it here, I have no idea. I’m NOT taking a plant PLUS my bag(s) on the bus. It’ll have to be at home until I get a drive to work. Oh, wait. Ma lives sort of nearby. I can leave it at her house on Sunday when we go for FamJam, and she can drop it off whenever. YAY! I’m so smart!
  • NaNoWriMo (National Novel Writing Month) coming up. I didn’t do it this year. Maybe this year. We’ll see. Budding writers, check it out here. Challenge yourself. Write a (50,000 word) novel in one month. November, to be specific. It’s fun, especially if there are events planned in your area. I used to looove Word Wars.
  • Awesome quote from JM’s yoga instructor:  “I wish I could sit on my couch and eat cake and it would make me one with everything. But it doesn’t work that way.” Read the whole (funny) post here.
  • Willow (Smith), the hair whipping – and now fireball – daughter of Will Smith and Jada Pinkett-Smith has a new song out. Firebaaallllll! Nicki Minaj features in it. Did you know that I REALLY like Nicki Minaj? She’s so FUNNY! Babe pointed out that she has a bit of a Caribbean sound in some of the lyrics. Particularly “fireball.” It’s true. Anyway, I like this girl. She’s so young and fresh, and APPROPRIATE. She doesn’t sing about love, sex, dating, or money. She’s staying relevant to her peers, but still giving us adults something to rock out to, and sing along with.
  • I feel like having a ruuunnn!

Nutella Cheesecake Brownies – StumbleUpon

 

I may not make this clear enough. I am a serious Nutella addict. Chocolate is my ish. That hazelnut… MMM! I also quite like cheesecake. Muchly. And now I can have ’em both?! IN A BROWNIE! Whoa, whoa, whoa… I need proof. You do too, right? Okay, let’s see…

Nutella Cheesecake Brownies

Ingredients:

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup + 2 tablespoons water
  • ¾ cup applesauce
  • 2 tablespoons canola oil
  • 1 block (8 ounces) cream cheese, softened
  • ¾ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 6 tablespoons Nutella

Directions:

  1. Preheat the oven to 350 degrees Fahrenheti.
  2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, applesauce, and oil; mix until well blended. Spread evenly in a greased 9×13 inch baking pan.
  3. In a small bowl, stir together the cream cheese, powdered sugar, and vanilla extract. Microwave on high for 10-15 seconds or until soft and easy to pour. Pour evenly over the brownie batter, drop Nutella by the spoonfuls on top, and make swirls in the batter with a knife.
  4. Bake for 25 to 30 minutes in the preheated oven. Let cool for at least 10 minutes before cutting into squares.

Yield: 12 brownies

Healthy Baked Chicken Nuggets
Gina’s Weight Watcher Recipes 
Servings: 4 • Serving Size: 1/4th of nuggets • Old Points: 4 pts • Points+: 4 pts
Calories: 164.9 • Fat: 4.6 g • Protein: 22.1 g • Carb: 7.7 g • Fiber: 0.9 g  Sugar: 0.1 g

  • 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
  • salt and pepper to taste
  • 2 tsp olive oil
  • 6 tbsp whole wheat Italian seasoned breadcrumbs
  • 2 tbsp panko
  • 2 tbsp grated parmesan cheese
  • olive oil spray (I used my Misto)

Preheat oven to 425°. Spray a baking sheet with olive oil spray.

Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 – 10 minutes. Turnover then cook another 4 – 5 minutes or until cooked though.

You’ve never seen anything this yummy and sexy looking. The taste… WELL… Pair it up with mimosaaaaas. MMM!

– 3 heart shaped pieces of challah bread (I used a giant cookie cutter)
– your favorite french toast batter (I used 2 eggs, 1/2 cup of milk, 1/4 tsp vanilla, and 1/4 tsp cinnamon)
– 3 large sliced organic strawberries
– 2 pads of salted butter
– 2 tbs of Mascarpone Cheese
– 2 tbs of Nutella (ZOMG, right?)
*optional whipped cream*

Ok lover, once you get your bread cut up into hearts and your french toast batter whisked, heat your skillet to medium high and melt some butter.  Then lightly submerge your challah for a hot sec into the batter.  After you dredge each piece, carefully place on your skillet without getting too much drip-age everywhere.  I created a nice little trail (on accident) so cupid would know where to find me. yep.

Zucchini Fritters with Tzatziki Sauce

Zucchini Fritters with Tzatziki Sauce.

Zucchini Fritters (About 8 fritters) Print Recipe

  • 1 lb of zucchini, grated (abt. 2 medium zucchini)
  • 1 large egg
  • 2 garlic cloves, finely chopped
  • 1/2 small onion, finely chopped
  • 1/2 cup all-purpose flour
  • 4 Tbs panko breadcrumbs
  • 1 Tbs chopped fresh mint
  • 1/4 cup Feta cheese, crumbled
  • Kosher salt
  • ground black pepper

Place grated zucchini in a tea town and squeeze to remove the liquid; discard liquid.

In a large mixing bowl wisk egg.  Add zucchini, garlic, onion, flour, panko, mint and feta cheese.  Mix until well combined.  Season with a dash of salt and pepper.

Heat vegetable oil in a large frying pan.  Scoop 2 tbs of batter, flatten slightly and drop into the hot oil.  Cook on each side for about 4-5 minutes, until browned.  Transfer to a plate lined with paper towel to drain.

Serve immediatly with Tzatziki Sauce.

The tzatziki I think is a must have with these fritters.  It has a little bite to it because of the garlic and red wine vinegar, yet still refreshing because of the yogurt and mint.  If you cannot find Greek yogurt you can substitute it for drained regular plain yogurt.  Line a colander with paper towel and pour in the yogurt.  Let it drain for 30 mins, until thick.

Tzatziki Sauce (Alton Brown)

  • 16 ounces plain Greek yogurt
  • 1 medium cucumber, peeled, seeded, and finely chopped
  • Pinch kosher salt
  • 4 cloves garlic, finely minced
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 5 to 6 mint leaves, finely minced

Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.

Yield: 1 1/2 cups

  • 1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 2 (8 ounce) packages BAKER’S Semi-Sweet Baking Chocolate, melted

Directions

  1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
  2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
  3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.
